The image above is from our family's farm in Greece. Located in a small village, nestled at the base of mountains. Where food, family, nature and God are at the center of life. Where moderation exists out of necessity and gratitude. Where family gathers round to cook together, talk and just be. Where plants are utilized as both food and medicine. Absent from the hum of technology, filled with the song of life.
Science has shown the Mediterranean Style of Eating to be among the healthiest and most life giving styles.
I'm thankful for a rich upbringing that taught me these ways.
My personal most vibrant version of self was challenged and changed by pregnancy and birthing two children. What a great experience in multiple ways! Although, I had 40# of extra body weight to lose and a lot of physical healing to promote. It was an enormous challenge to lose all that weight with a 'broken' body, but I DID IT! I'm SO THANKFUL for the opportunity to practice my craft on myself in a new way.

Being an American influenced my childhood as well. The public school system introduced me to grossly unhealthy foods and portions. As such, I lost my way, and began to grow wider and larger. I felt the sting of judgement, the immobility of an overweight status, and the depression of junky food choices in my growing brain. Upon entering the 6th grade I was influenced by a long-term substitute teacher. In my shyness, I spoke little but listened a lot. I heard her speak of avoiding animal products and thought "you mean I have a choice?!" Luckily for me, I changed my diet a lot in that year. Very quickly I shed unhealthy weight, gained my energy back and my brain fog cleared up too! That was the beginning of my training for recreational athleticism!
It turns out, I was not the only one in my family to be heavily influenced by the American style of eating. Heart disease and cancer killed my father when I was just barely 22. Although by that time I had already earned my first degree in nutrition, I was too young, inexperienced and unaware to help him.
But now, with 20 years of experience, I can help you.
Great inspiration is derived from our
magnificent garden and food forest.
Flowers, vegetables, over 100 fruit trees, a plethora of native plants, bees, trees and a life-giving pond with the music of amphibians, birds and bugs. It's a joy to go on a backyard walk, munching all the way.
Eating seasonally is extra flavorful and has hidden health benefits.
Creating kid approved meals for optimal brain development and physical growth is a daily persuit. The challenge is great, the rewards are priceless. Each bite they take inspires me more! :I :o :)
My passion for the field of dietetics is fueled by my greater than life energy gifted by a healthy diet and lifestyle as well as an unyielding desire to help others live the most vibrant version of self.
